I have been engaged for 2 years and been with her overall three. When we first met and started dating i was 19. She was different than she is now. She even admitted to changing little things about herself to please me. But I fell in love and this was my first real relationship so I wanted to propose. Half of me was excited and the other said it's too fast but I did it anyway. Fast forward and over the past year she has changed (from carefree to very hard to please, doesn't listen, lack of respect) I still battle weather it's her schooling that's stressing her out or if it's really just her. Then there's also my own inner struggle of do I even want to settle down and am i missing out on life? Any advice?

Attitude isn't something that is affected by schooling. So, if she has changed from good to bad, it has nothing to do with schooling.
However, I'll advice you have a one-on-one talk with her and let her know you aren't okay with her sudden change. I believe she'll change once she hears this because she definitely values the relationship.

Her change in attitude is normal for people who have been in a relationship for a while. She probably feels more comfortable now with you, unlike when you both first met. She was probably acting carefree initially because she wanted to have you, and now that she have you she doesn't see the need to act that way any longer. You have also changed just like she changed but never realized it. You definite aren't acting the same way you were acting initially in the relationship. So, it's a normal phenomenon in any relationship.
I'll advice you talk to her about any attitude you don't like instead of considering breakup.

Being engaged for two years? why are you a long holding pattern from marriage
consumation? this is probably tall on her personality mod. she is may be frustrated and losing interest in you. you need to cook or get out of the kitchen settle your future with her. her attitude changes leads me to believe she is investing in other opportunities, already.
